How to properly store cloudberries at home fresh, frozen and preserved

Wild northern berry has a huge amount of vitamins that you need to be able to preserve after harvest. In shape, the fruits resemble yellow raspberries, but their smell and taste are completely different. How to properly store cloudberries so that they do not lose their healing qualities and retain all the available nutrients and trace elements for a long period? This question worries many connoisseurs of delicious vitamins.

How and how much can you keep fresh

The storage time for cloudberry berries at home directly depends on the chosen harvesting method. The frozen product retains its qualities for several years, but it can no longer be re-frozen. Jam made from fresh berries, subject to the necessary conditions, will stand for about 2 years. Fresh fruits sent to storage in the refrigerator will remain there no longer than 7 days, provided that they have been correctly harvested. An overripe berry will last no longer than a few hours.

Classical ways of harvesting berries

In the cold season, vitamins are especially necessary for the body, so they try to prepare cloudberries for the winter in any available way.


When cloudberries are frozen, all the beneficial qualities and original taste are preserved in it. Before sending the berries to the freezer, they are cleaned of stalks and sepals. They can be harvested whole with the addition of sugar or grind to a mushy state.


In the absence of time or desire to preserve cloudberry fruits, they can simply be dried. The berries are pre-checked for rot, and then laid out in one layer on a sheet of parchment or paper and placed in a dry room, protected from direct sunlight. You can put the fruits in the oven, but you will have to make sure that the temperature there does not exceed +50 ° C, otherwise the juice will stand out, and the cloudberries will bake in it.


Cloudberry is well suited for making various types of preserves, including:

  • fruit drinks;
  • compotes;
  • jam;
  • preparations in their own juice.

Culinary experiments continue to this day, so preservation recipes are constantly being diversified and improved.

Soaked cloudberry

The classic version of making soaked cloudberries requires the following ingredients:

  • clean water - 1 liter;
  • granulated sugar - 0.2 kg;
  • cloudberry berries - 1.5-2 kg.

Cooking method:

  1. Pour the fruits into a sterilized container, boil the syrup from sugar and water and cool well.
  2. Pour the cloudberries with the syrup obtained and cover first with a piece of cloth, and then with a lid. The workpiece can be consumed within 3 months.

In its own juice

The peculiarity of harvesting cloudberries in their own juice is that no sugar is added to the berries. The fruits are ground into a homogeneous mushy mass using a strainer or food processor. Beforehand, they are well washed and blanched. The finished puree is laid out in a sterilized container and covered with lids. Those with a sweet tooth can add a little honey to the preparation.

Candied fruits

To harvest cloudberries without boiling using this technique, you will need:

  • cloudberry fruits - 1000 g;
  • granulated sugar - 500 g.

Cooking method:

  1. Blanch the washed berries for 3 minutes, then pass through a sieve, add sugar and mix thoroughly.
  2. Cover the mixture with a lid and let it brew for 6 hours, then put in jars, cover with lids.

Berry juice and compotes

Juices and compotes from vitamin fruits are especially popular. To prepare a healthy drink you will need:

  • cloudberries - 1000 g;
  • granulated sugar - 150 g.

Cooking method:

  1. Blanch the fruits, cool and pass through a juicer.
  2. If you want to get a completely transparent juice, then filter it additionally through cheesecloth.
  3. Pour the liquid into a deep saucepan and put on low heat.
  4. Cook, not bringing it to a boil a little, then pour out the sugar and leave it on the stove for another 5 minutes, and then pour it into sterilized jars and close.

If you want something unusual

Lovers of exoticism often want to amaze with their culinary skills and cook something unusual from healthy products. Cloudberry is no exception for them.


Delicious and healthy jam is made from the following ingredients:

  • granulated sugar - 1000 g;
  • cloudberries - 1000 g;
  • clean water - 1 tbsp.

Cooking method:

  1. The fruits must be sorted out and washed, and sugar must be added to the water and put on fire.
  2. As soon as the syrup starts to boil, throw the prepared cloudberries into it and simmer for half an hour, stirring occasionally.
  3. To get rid of the seeds, pass the jam through a sieve, and then put it back on the stove and boil for another 10 minutes.
  4. Pour the jam into the jars and close.


To make delicious jam you will need:

  • berries - 0.7 kg;
  • granulated sugar - 0.7 kg;
  • clean water - 1 tbsp.

Cooking method:

  1. Sort the cloudberries and rinse, boil the syrup from water and sugar.
  2. Throw in the cloudberries and cook for 15 minutes.
  3. Spread out in the prepared container and close.

Five-minute jam

A delicious and healthy dessert is prepared from the following components:

  • berries - 1000 g;
  • granulated sugar - 1000 g;
  • clean water - 1.5 tbsp.

Cooking method:

  1. Pour sugar into water, put on fire and wait until it completely dissolves.
  2. Throw berries into boiling syrup and cook for 5 minutes.
  3. Cool the jam, and then boil again for 5 minutes.
  4. Pass the treat through a sieve and boil again for 5 minutes.
  5. Pour into prepared containers and close.

Cloudberry jelly

You can make jelly from the following ingredients:

  • cloudberry - 1500 g;
  • granulated sugar - 1000 g.

Cooking method:

  1. Sort and rinse the fruits, then pass them through a sieve to remove seeds and skins.
  2. Add sugar, pour everything into a saucepan and simmer over low heat for 45 minutes, stirring continuously.
  3. Pour into prepared jars and close.

Cloudberries in their own juice with honey

This blank is not cheap, but it fully justifies all the costs. Rinse the berries, pour one layer of them into the prepared container and pour 3 tbsp. l. honey. Put the next layer on top, and repeat everything until the fruits run out. The final layer should be honey. Cork hermetically and send to a cold room.

Cloudberry syrup concentrate

Such a syrup is prepared mainly from overripe fruits. They are passed through a sieve and a thick juice of a beautiful amber color is obtained. For 1 liter of juice, you need 500 g of granulated sugar. Mix everything thoroughly, pour into containers and seal tightly.

Cloudberry pastilles

An exclusive dish is prepared from the following components:

  • berry puree - 1 kg;
  • granulated sugar - 0.5 kg.

Cooking method:

  1. Pour mashed potatoes into a saucepan and mix with sugar, put on fire and cook, stirring constantly, for 15 minutes.
  2. Put the resulting jam on a baking sheet lined with parchment.
  3. Dry the dish in the oven at +75 ° C with the door ajar.
  4. You can use an electric dryer for these purposes.
  5. Roll the pastille and store in parchment.

Sweet fruit liqueur

You can prepare a unique drink if you have the following components:

  • cloudberry fruits - 0.6 kg;
  • vodka - 1 liter;
  • granulated sugar - 0.5 kg;
  • clean water - 0.5 l.

Cooking method:

  1. Wash and sort the fruits, then chop with a blender.
  2. Pour the resulting puree into a three-liter jar, add vodka and let it brew for 10 days.
  3. After that, boil the sugar syrup, let it cool and add to the resulting tincture.
  4. Leave to infuse for another 2 weeks, occasionally shaking the contents.

After the specified time, strain the liquor, bottle and send to the basement.
